Creamy Seven Onion Soup

I’ve sworn for over a year that I wasn’t going to post this recipe as it’s my secret weapon!  Everyone loves this soup, even my kids who will swear to you that all things onion are EVIL.  It’s really quite easy but elegant.  The silky texture and sweetness from the variety of onions will virtually ensure no leftovers.  I have doubled the recipe in the past with the same great results. Roasted Poblano Peppers stuffed with Corriander Rice

Roasted poblano peppers stuffed with coriander rice are mouth-watering and satisfying vegetarian substitutes for lunch or dinner.

Char the poblano peppers over an open fire if at all possible. The combination of smoky peppers, chili heat, spices and lime juice, with plenty of fluffy rice to soak it up, is mesmerizing and almost irresistible.

Preparation is easy, and only a quick toss is required to finish the dish.

The strong Tex-Mex overtones do not restrict this dish to a Texas or Mexican meal, but contribute interest to almost any cuisine. The heartiness of the peppers and rice replaces the hunger for meat. I have probably 25 recipes for Beef Stroganoff, and while this isn’t the simplest recipe in terms of steps, it is by far the best end product. One word of caution, don’t skimp on the step of making the roux, getting the deep color at that step will give you both deeper flavor and give the dish a great color for presentation.
