The Best Kale Salad

kale saladI have to give credit where credit is due.  My sister-in-law, Heidi, provided this recipe.  It is truly awesome and I can’t wait for you all to make it and let me know what you think too.  As we approach the warm weather this salad  should become a staple of picnics, BBQ’s and/or any other outdoor dining experience you can think of.  It takes all of about 5 minutes to put together.

  • 1 bunch Kale (chopped in to 1″ pieces)
  • Shredded carrots
  • Roasted sliced almonds
  • Dried cranberries

In a food processor or blender, combine:

  • Large hunk of fresh ginger (1-2″ peeled)
  • 2-4 garlic cloves
  • 1/8 cup honey
  • 1/8 cup soy sauce
  • 1/8 cup cider vinegar
  • 1/8 cup lime juice
  • Blend together then slowly add 1/3 cup olive oil while processor/blender is running.

Combine Kale, dressing, carrots, nuts and cranberries until coated.  Cover and refrigerate.

The acid in the lime juice and vinegar help to soften the kale just a bit so making this ahead (even a day ahead) works really well.
